The pinot noir grapes used for this magnum are grown using organic techniques (The Donaldson's were, and remain, pioneers in the field of sustainable viticulture) on Canterbury's Teviotdale Range. Here, the grapes benefit from protection from the elements that would otherwise blow in from the ocean, while also benefiting from long, warm days, cool nights, and a lengthy, dry Autumn. Ageing for some 18 months ahead of bottling, Pegasus Bay will also provide a unique taste experience rarely associated with its territory of growth.
